#20 Lemon/Apple mead

This was made using the boiled ginger from a batch of ginger beer, simmering lemons and limes, and adding apple juice. This was a random idea and honestly the result wasn’t very good. I believe it was just too many flavors for one batch and using an Ale yeast just didn’t have the tolerance to ferment enough of the sugars. I may try this again with just the ginger and apple as the lemon/lime overpowers almost everything else. In the future when using lemon or lime I will reduce the amounts.

Ingredients

  • 10 lbs. Kirkland Honey
  • 1 gallon Treetop Apple juice
  • 4 lemons
  • 4 limes
  • 3 gallon water
  • Yeast SO-5

Recipe

  1. Cut lemons and limes into 1/8ths.
  2. Bring Water to boiling.
  3. Add lemons and limes to water.
  4. Turn on the heat to a simmer and let it simmer for 30 minutes.
  5. Remove from heat.
  6. Add Apple juice and ginger to Lemon/Lime water this will help bring the liquid to a temp that won’t kill the yeast.
  7. Warm Honey to around 100°F to make for easier pouring.
  8. Add the honey to the water and juice mixture and stir.
  9. Pour the mixture into a fermenter.
  10. Fill the fermenter with cool water until you reach a 5 gallon volume. 
  11. Add the yeast.
  12. Measure the mixture’s gravity. (Mine: 1.068)
  13. Let ferment for at least 2 months.
  14. Check gravity, wait 2 weeks, check again and repeat until the gravity doesn’t change.
  15. Bottle or Keg
